I think one of the most delicious treats is crepes. When I was a kid, my mom would sometimes make them for us on her very old, but still high-tech crepe maker. When I got married, I got one, too! It makes crepe-making so super easy.
We had some friends over for some wild crepe-making-and-stuffing-and-eating. Delicious!
Here is the easiest recipe in the world:
2/3 cup flour
1 cup milk
Pinch of salt
A little butter for greasing the pan or crepe maker
In a blender combine eggs, milk, flour, salt. Process until smooth. Cover and refrigerate 1 hour.
Heat a skillet over medium-high heat and brush with a little butter. Pour 1/4 cup of crepe batter into pan, tilting to completely coat the surface of the pan. Cook 2 to 5 minutes, turning once, until golden. Repeat with remaining batter.
…or you could use a crepe maker like me! Love it.
((ps, If you are finding that the crepes keep tearing, add a little flour to your batter. I know it’ll make it a tiny bit thicker, but for us crepe-making novices it makes making them soooo much easier 🙂 ))
